Lift your glass to these AF options and enjoy your nights (and days) with delicious and creative drinks
Inspired by the movie Class & the band Rockmelons…school is in session!
Who doesn’t love Rob Lowe & Andrew McCarthy? Well DJSassy got extra credit for rewatching Class from 1983! And I needed this NO-jito…whoop! Rob plays a rich kid named Skip so I named my mocktail after all his mint.
Plus I dig 80’s music and have been listening to Money Talks by the Rockmelons (1988 AU) - also perfect for Class.
INGREDIENTS:
1 - 2 oz Ecology & Co London Dry
Watermelon Soda - I’ve used Hopt (subtle) AND Arizona Tea Watermelon Fruit Juice Cocktail (sweet)
Mint Leaves - I bought my own plant since I use SO much!
Limes & Lime Juice - I like Rose’s
In a rocks glass, add mint (a handful to start - add more if you want!) & the juice of a 1/2 lime or 30 mls of lime juice.
Muddle - you can use a wooden spoon handle if you don’t have a muddler. It works like a charm. Really dig in to release all that lovely mint.
Add ice to your glass.
Pour your dry spirit over the ice.
Top with your favourite watermelon soda or juice. Add a mint garnish and lime slice and there you have an A+ beverage…Ring a ding ding!

Inspired by Goonies, loved by all pirates!
This week I’m re-watching Goonies from 1985 - I just adore Sloth and his friendship with Chunk! And they are our inspiration for this week’s mocktail, the Baby Ruth Chocolate Truffle Shuffle!
INGREDIENTS:
1 - 2 oz Ecology & Co London Dry
Chocolate syrup - I love NatVia no sugar added
Almond flavouring
Vanilla flavouring
Premium Coconut Cream - you know I love Trident
In a container (I use one of the tall ones from my Magic Bullet), add a small can of coconut cream, 1/2 the amount of chocolate syrup (unless you like yours extra chocolatey!), 2 dashes of almond syrup and the same with the vanilla flavouring.
Shake it, shake it, shake it really good because the chocolate can be thick.
Rim your martini glass with some of the chocolate syrup.
In a shaker with ice, add your dry spirit (I love Ecology & Co!) and your new chocolate / almond mixture (this can also be used as an Irish cream substitute or used in any creamy chocolate drink - it keeps for at least a week - I don’t know, it’s never lasted that long because I LOVE IT!)
Shake again - this time for longer so the 2 mixtures blend and become smooth and more of a liquid.
Pour into your rimmed glass WHALLAAAHH! You can also shave some chocolate onto the top. Enjoy with the other pirates, AND be sure to make one for One-Eyed Willy!

Also known as the You Say It's Your Birthday Cake Mock-tini…
This past week I've been re-watching and celebrating Sixteen Candles from 1984 - so I was inspired by the Altered Images song, Happy Birthday - also Farmer Ted does sing "You Say It's Your Birthday" to Samantha - so we get double the fun with this.
INGREDIENTS:
6 squares of white chocolate - I love this dairy-free plant-based one by Sweet William - it has yummy strawberry bits
Handful of white choc baking buttons - again from Sweet William
60 ml Ecology & Co. London Dry
1/2 can (or more!) of premium coconut cream - the key is premium and I adore Trident - I use it in everything!
Almond Syrup - you can use just a few dashes (again, more if you like) - this will be in most stores in the baking section
Coloured sprinkles - I use the little cute balls!
And before I get to the directions, I'm not a professional baker - I'm not even a beginner baker, and I was able to whip this up in a flash...you'll see what I mean...
DIRECTIONS:
Boil water in a pot - if you don't have a double boiler (I do NOT!), use a metal bowl - I used a small cocktail shaker and it worked amazingly!
Put the white chocolate squares and baking buttons in the shaker and stir frequently - I used a metal chopstick because that is what I had and it was PERFECT!
Take a small dish and pour sprinkles in there.
While the chocolate is melting, take the chopstick and rim the glass with the chocolate and dip the glass into the dish of sprinkles so they decorate the rim of the glass like a fun little party!
Once the chocolate is totally melted, pour in the coconut cream quickly and stir with chopstick or other utensil.
Once that is really mixed, it will have cooled down. Add the Dry London spirit, the almond and you can put the top on the shaker (how convenient, right?) and shake. You can add ice yet be prepared for it to harden a bit.
Pour into your glass, make a wish and enjoy. I like mine room temperature because it for sure tastes like cake.

Last year during Dry July, I was introduced to some alcohol-free products. I was intrigued and wanted to make my life more AF. I also wanted to be more safe, healthy and STILL have a blast!
It was a match made in heaven and I grabbed every product I could get my hands on and started making mocktails to compliment The 80's Mixtape - my radio show.
And #PopClinkFizz was born! I pair a mocktail with an 80's movie and music each week. And now I'm bringing the show on the road to Club Soda.
